Walid Mando of FORMA LLC designed the interior of the new Plumed Horse in a collaborative project with the new owners and the commissioned artist Makoto Fujimura. Working to embody the new Plumed Horse mission "personalizing the art of elegant dining," Mando created an artistic contemporary space that is warm and inviting. The design melds Old World elegance with sleek contemporary design. The restaurant's mahogany-accented banquet facilities, including the "Library," reflect an Old World feel. These traditional rooms blend seamlessly with the innovative design for the lounge, the dining room, and the showcase wine cellar. Designed with the preferences of Saratoga designers in mind, the contemporary dining room provides diners with space through sound-dampening treatments, lighting, and the layout, which avoids the "row of two seaters along the wall" that is in vogue in city restaurants.
The facilities are ideal for weddings and other special events, as well as corporate banquets and meetings. The restaurant is open only for dinner, except during the December holiday season, when it is also open for lunch. For special events during the day, personalized service is available through our event director, Amy Paris.
The Chef's Table is an 8-person room overlooking the kitchen that offers a special Chef's 10 Course Tasting Menu with wine pairings and vegetarian options. Advance reservations are required. The Rose Room, with the rose etched glass windows, and the Gold Room, with the stained glass windows, each accommodate up to 24 people. One banquet room below the main floor that seats 80 and opens out to our garden patio, has re-opened with a fresh and clean new look. These facilities feature a separate entry to provide privacy.
