Florida Gulf prawn “Cocktail”, with chilled Sake preserved citrus, fresh wasabi

Salad

Mesclun greens dressed with domestic goat’s cheese and red wine vinegar, dried currants

Butter Lettuces, shaved fennel, radish, pine nut vinaigrette

Escarole as a salad green, currants, ricotta & pancetta vinaigrette

Soup

Mushroom soup, chive creme fraiche

Potato leek soup, sauteed prawns

Entree

Scottish salmon, red wine risotto & mushroom jus

Ahi tuna, lemon crusted potato & herb vinaigrette

Herb crusted free-range chicken, roast potato, pureed spinach, poultry jus

Smoked center cut pork chop, roast new potato and habanero apple gastrique

Braised short ribs, purple potato puree, herb salad

Filet of beef, caramelized onion tarte, red wine veal jus
